Monte Dall’Ora, in the heart of Valpolicella, was born from a dream: to interpret nature without forcing.
They started from an idea of the environment even before that of a vineyard. A daily experience, a meeting between two people and a shared instinct have given rise to an exciting and always new path.
The great love for the land, the desire to express their emotions and the willingness to be amazed by nature guide their choices every day.
TERROIR
The vineyards of Monte Dall’Ora are located in an area of classic Valpolicella particularly suited to viticulture: grapes have been grown and wine has been produced on the hill of Castelrotto since the fifth century. The choice of producing single cru wines summarizes our search for identity. In Monte dall’Ora and in Camporenzo they cultivate the Veronese pergola vines on terraces facing south-east towards the city of Verona. Our high-hill Valpolicella Superiore is located in San Giorgio, where refinement and verticality are predominant. Finally, in Sausto, a new synergistic vineyard project is coming to life.
Rocks emerge from the earth half a meter deep which form a limestone and limestone base of Eocene origin. The rocks, quite friable, drain excess water and ensure the necessary humidity for the roots of the vines, which descend deeply extracting precious mineral substances.
A few steps from the rows there are aromatic plants, cherry and olive trees. In the field and in the vineyard, every choice is made with the utmost respect for biodiversity, the most precious heritage they have received from those who preceded them and they want to pass on to those who will come after them. Theirs is an artistic work in a synergistic vineyard: they work with a living material that evolves and changes in their hands, questioning themselves and calling them to a great responsibility.
In their vineyards, raised with the classic Veronese pergola, they grow only native grapes of Valpolicella: Corvina, Corvinone, Rondinella, Molinara, Dindarella and Oseleta. Each Monte Dall’ora wine is made from selected grapes from a single vineyard, following the different maturation of the various vines. The choice of "mono cru" wines allows them to fully express the true terroir and seasonal trends.
BIODIVERSITY
Working and safeguarding the territory they live in is for them a natural choice of life: how can they pollute the earth where their children eat, play and grow? The earth is alive and dynamic, a gift that they cannot waste or ruin.
The awareness of biodynamic agriculture summarizes their need to be in tune with nature, the search for beauty leads them to see the vineyard as a garden where polyculture brings wealth and biodiversity.
Refusal of chemical fertilizers, herbicides and pesticides. Listening and confrontation with the strength and timing of nature. Defense of soil fertility and development of microorganisms. Plants become stronger in the face of attack by parasites, the balance between land-vineyard-man-wine becomes concrete in a garden full of life, colors and scents.
The fields, left uncultivated for decades, have developed a vast and original variety of plant species. Wild herbs and insects have found their habitat, which contribute to making this soil balanced and alive. Monte Dall’Ora encourages the development of this microcosm by planting aromatic plants that attract bees with their fragrant blooms and by sowing cereals whose rooting seeds move and aerate the soil.
They try to safeguard the knowledge and traditions of their grandparents by taking care of the friendly herbs for the vineyard and preparing herbal teas with dried flowers and leaves (nettle, dandelion, yarrow, sage, peppermint) which during the summer they sprinkle on the vines.
WINES
The Monte Dall’Ora cellar, dug into the limestone rock, blends harmoniously with nature. They conceived and designed it to express their vision, using natural materials from the area and adopting all useful measures for saving energy. In the loft, in winter, two large windows allow air to circulate freely during the drying of the bunches for the production of Amarone and Recioto, without any forcing.
Fermentations are spontaneous, originating from indigenous yeasts present on grape skins. To ferment they use small steel vats for the Valpolicella and wooden vats for the Amarone.
Time and the spontaneity of the grapes are the two natural ingredients that, combined with their love and daily work, lead to wines that are an expression of our terroir and a way of working capable of telling their emotions.
They are territorial and personal wines, complex and long-lived wines, wines that excite Monte Dall’Ora every year with different nuances and a recognizable soul. They are their interpretation of a land they love and surprise them season after season.
