Description: ruby ​​red color. Aroma of red fruit, morello cherry and mint. In the mouth the freshness and flavor prevails with notes of menthol and wild herbs.

Pairing: wine that accompanies you all day, by glass in company and throughout the meal with soups, white meats and fatty fish.

Provenance: terraced vineyards on calcareous soils on the hills of Castelrotto and San Pietro in Cariano, Veronese pergola breeding, cultivated with organic and biodynamic methods.

Harvest: harvested at the end of September in 20 kg crates. Destemming and pressing in the same day.

Vinification and Aging: spontaneous fermentation with indigenous yeasts for 6/8 days with manual handling of the mass. Aging in stainless steel and cement for 3 months.

Analytical data: Alcohol 11.5% Vol - Total acidity 4.97 g / l Ph 3.40 - Dry extract 23.50 g / l - Total sulfur dioxide 39 mg / l.
