The Gialletto is elliptical, with a deeply yellow, finely grooved and lightly netted skin.Its high water content makes it exceptionally refreshing, while its remarkablekeeping qualities explain why it is traditionally known as a winter melon. Althoughharvested in summer or early autumn, it can be stored in a cool cellar untilDecember and, in parts of Italy, is traditionally saved for Christmas
