Prosecco DOCG is produced from Glera grapes by a vinification process that does not involve any contact with the skin, starting with a gentle pressing of the grapes to produce 'free-run' must, the best kind of must, which is then purified by a process of 'decantation'.
After being left to ferment for approximately 15 days and being expertly racked several times, the wine acquires an elegant aroma and perfect organoleptic balance.
The winter period is crucial for filtration and for obtaining a clear wine, while preserving all the microbiological characteristics, yeasts and good bacteria.
The wine is stabilised and during the following spring the bottling process allows the yeasts naturally present in the wine to activate a natural and spontaneous second fermentation in the bottle, resulting in a perfectly harmonious wine with low acidity and extremely drinkable.

A hilly region, clay, saline soil, of moraine origin. Ancient vineyards (many vines on the property are up to 80 years old).
No herbicides, the vast majority of the production process is manual, phytosanitary treatment with the lowest possible environmental impact.
