Paski 2018

Grape variety: Coda di Volpe Bianco

An original, complex and intense wine, "Paski", obtained from pure foxtail grapes, grown at 450 meters above sea level within the Campania IGT appellation.

The vineyards are conducted with organic farming methods, on calcareous and clayey soils, rich in sandstone and the work in the cellar involves subtraction rather than additions; green light for indigenous yeasts, spontaneous fermentations carried out partly in steel and partly in wood, in small chestnut barrels.

The aging in steel, for 6 months sur lies, completes the vinification of this little jewel of the Cantina Giardino, bottled without clarification, filtration and added sulfur.

Tasting notes: Deep straw yellow, slightly hazy to the eye. The nose offers multifaceted and complex floral, fruity and honey aromas, enriched by elegant hints of gunpowder and mineral notes in the background. On the palate it is full-bodied and enveloping, with a soft and savory sip, slender by a lively acidity.

Pairings: It goes well with seafood in general, especially with fish appetizers, grilled salmon and tuna, first courses with fish sauce, fish soups, land appetizers and savory pies. Do not serve cold but at a temperature of at least 10/12 ° C.
