Grape variety: Coda di Volpe Rosso
Daniela and Antonio remained among the last winemakers to preserve this grape variety typical of the Irpinia area from extinction: the red Coda di Volpe. And they are certainly the only ones to vinify it in pink. Coda di volpe is a vine resistant to the cold of autumn, characterized by a thick skin and a light aromatic note. In the past it was left on the plant even until mid-December, to be harvested withered for consumption or to be cooked. This pink version macerates on the skins for 2 days and aged 12 months in chestnut wood.
Obtained from the red foxtail, a rare indigenous grape variety, the “Volpe Rosa” is the result of a traditional vinification which involves spontaneous fermentation with indigenous yeasts and a 2-day maceration. Then it ages in chestnut barrels for 1 year and 6 months in the bottle.
Unfiltered and not clarified, it is produced in the least interventionist and most natural way possible, like all the wines of Cantina Giardino
Tasting notes: "Volpe Rosa" of Cantina Giardino has a beautiful color between pink and copper and a slightly turbid aspect. A Campania Rosato IGT with an intense and fascinating nose, of withered flowers, candied fruit, dehydrated and hints of caramel. On the palate it is soft and well structured, with a fresh acid texture that makes the sip pleasant and drinkable.
Pairings: It goes well with all seafood, appetizers, first and second courses of fish. Try it with fish soups or a tasty salad of baby octopus and grilled squid.
