Vino Bianco Perpetuo Memorii

Grape variety: Extra lucid Catarratto, Grillo

It’s a perpetual wine which regenerates year after year bringing inside the history of the winery. It is through digging in the farmers’ memory that you can find the perpetual method, when the farmers, not knowing of the complex winemaking process like today, would take care of their own barrel at home where they would pour the new wine every year. They have caught up with this old tradition to make of Memorii a well structured and complex wine, that challenges our harvests and it perpetuates over time.

Wine making
A blend of different yearly harvests would stay to ripen in a big barrel for a long time. Starting from the first bottling the wine will be refilled with the one of the new harvest. That way we’ll have a light rejuvenation of the wine maintaining the historical memory of every previous year. Every year the cycle will be repeated.

Organoleptic characteristics
Colour: amber yellow. Smell: initially honey and vanilla, but progressively Mediterranean stain, dill and elder in particular. Taste: you confirm light notes of vanilla but you can add candied fruit as well. Interesting notes of acidity, delicate and harmonic. It maintains a certain complexity that lasts a long time.
