Valpolicella Classico Superiore San Giorgio Alto 2015

Grape variety: Corvina 60%, Corvinone 20%, Rondinella 20%.

Description: ruby ​​red in color, aromas of spices, balsamic and mentholated notes on the nose. In the mouth it is dry, persistent and fresh in the finish. Great elegance and finesse. Promises good longevity.

Pairing: wine that accompanies with elegance without overwhelming the flavor of the dishes.

Origin: the vineyard is located on the hill of San Giorgio Ingannapoltron, facing south west, altitude 500m above sea level. The grapes have great complexity and express a unique terroir. Guyot farming with organic method and use of biodynamic preparations.

Label: the kite on the label represents a choice of freedom, this is a wine that goes against the wind because it moves away from the common image of Valpolicella to go towards an ideal of great purity and identity of a unique vineyard.

Harvest: manual harvest in 15kg crates in late September / early October.

Vinification and Aging: spontaneous fermentation for 8/10 days and further maceration on the skins. Aging for 12 months in 25hl barrels and further refinement in the bottle.

Analytical data: Alcohol 13% Vol - Total acidity 6.24 g / l Ph 3.21 - Dry extract 28.40 g / l - Total sulfur dioxide 40mg / l.
