110 months of rest in steel and cement on its lees, which translated is equivalent to over nine years of aging. A very long period plus another ten months in the bottle, which make this Marche Bianco IGT "Il San Lorenzo", from Fattoria San Lorenzo, truly an excellence. Complex on the nose and unique in all its organoleptic characteristics. It represents an experience to try at least once in a lifetime.
Tasting notes: Intense golden yellow to the eye. Honey, candied fruit, acacia flowers, apricots and peaches, then also mint and references to tropical fruit: the olfactory bouquet that opens to the nose is complex and rich. The taste is equally satisfying and not at all obvious, velvety and delicate, balanced and persistent.
Pairings: It goes well with preparations based on fish, seafood and shellfish. Excellent with mussels and razor clams au gratin.
Bianco San Lorenzo is a wine from the Marches made outside the usual schemes and dedicated to lovers of great, long-lived and complex whites. It was born from the desire to highlight the unique evolutionary characteristics of the great grape from the Marches, too often served young but capable of giving wines of great longevity. It is a label deliberately far from the mainstream taste of fast, easy and simple consumption, which bases its expressive essence precisely on the slow passage of time as an indispensable value to reach the highest peaks of excellence. Grapes of extraordinary quality and a vinification with minimal intervention allow Verdicchio to enhance all its excellent capacity for aromatic evolution.
It is one of the most interesting long-aged Italian whites. The grapes are fermented in steel tanks, in an absolutely spontaneous way, with indigenous yeasts and without any temperature control. Before being bottled, the wine ages for a period of about 11 years in concrete and steel tanks. In the glass it has a bright and intense golden yellow color. The olfactory profile offers particularly complex and rich aromas, with notes of officinal herbs, aromatic herbs of the Mediterranean scrub, ripe yellow fruit, dried fruit, resin and balsamic hints. On the palate it has a good structure, soft and enveloping, with a very deep sip, which stretches vertically towards a savory finish with balsamic and honeyed echoes.
