Grape variety: Fiano
It is a wine from the past, capable of giving unprecedented and intense organoleptic sensations. The Campania Fiano IGT “Sophia”, produced by Cantina Giardino, comes from a long maceration on the skins, and above all it is left to refine for a year in two hundred liter terracotta amphorae. It is material and slightly tannic, and offers sensory experiences outside the box. Exceptionally satisfying.
Tasting notes: Golden yellow with orange reflections, with a slightly cloudy appearance due to vinification without filtration. Intense and complex floral aromas on the nose embrace fruity and citrus hints, followed by brackish notes in the background. Rich, savory, mineral and tasty on the palate, with a soft and enveloping structure, with a slight tannic persistence.
Pairings: Ideal with fish, mushrooms, legumes and such savory dishes. Excellent with parmesan aubergines.
