Grape varieties: Catarratto
Catarratto represents the vine of the most ancient tradition. It has always been cultivated. In the past it was very rare to find it outside this area. It is a great responsibility to continue in the tradition of their fathers. All Valdibella viticulturalists cultivate it precisely because of the deep bond created over the years.
Area of origin: Sicily, Camporeale (Palermo province)
Training system: Guyot
Harvest period: September and October
Yield (in quintals of grapes per hectare): 80 quintals/Ha
Vinification: The grapes are harvested by hand and transported to the cellar in small cassettes where they are destemmed and pressed. Subsequently the decanted must is racked and has naturally fermented must added to it (prepared during the previous days with grapes from the same vineyard). Fermentation lasts about 20 days at a temperature of 15° C. Then the wine is aged over the winter in stainless steel tanks and bottled the following spring.
Refinement: 6 months in stainless steel tanks
Color: Straw yellow with greenish reflections
Smell: Very fruity with notes of wild flowers and citrus fruit
Taste: Wine of good structure with a long and persistent finish
Service temperature: 12° C
