The must was only fermented\u003cbr\u003ein stainless steel and kept on its lees until spring.\u003cbr\u003eGrapes from the sandier, better-exposed vineyards (around 20% of the total surface\u003cbr\u003ededicated to Arneis) were destemmed and fermented on the skins in concrete.
